Re-entering work after nearly three weeks off has been a bit of a shock. I love working — don’t get me wrong, but there’s something so beautiful about waking up each morning with the freedom to follow whatever the family feels like doing. Where leisurely breakfasts like the photo above aren’t rare, but instead feel like a rite of passage to savor.
This year, I’ve been focused on nourishment through the lens of what serves me, and what no longer does. Instead of deprivation, I am nurturing abundance: high-quality fiber, more protein, deeper sleep, closer friendships, slower meals, quieter moments, and a steady journey toward the calm.
This fancy breakfast sandwich is more of a method than a recipe, and it comes together much faster than it looks. In about 10 minutes, you can make it for anywhere from one to six people, depending on the size of your nonstick surface and whether you’ve got the recommended condiments on hand.
